Pan-Seared Salmon
4 Servings
Ingredients:
1 tsp olive oil
Four 6-ounce skinless salmon fillets (about 1¼ inches thick)
Scant ¾ tsp coarse salt
¼ tsp freshly ground pepper
Preheat a large cast iron skillet over high heat. Add the olive oil, tilt
the pan and cover the bottom evenly. Heat until the oil is almost smoking.
Season the salmon fillets with the salt and pepper and add them to the
skillet, skinned side up. Cook until the salmon fillets are golden brown
(about 4 minutes). Turn the salmon, lower the heat to moderate and sear
until fillets are just cooked, 3-4 minutes longer. |
